Kuew Teow 'Kelepot'

 
 
 
 
Resepi Kuew Teow Claypot ['kelepot']

Cincang BBesar [1/2labu] + BPutih [4 ulas]. Tumis dg olive oil [optional, vege oil pun okay]. Tumis bersama Cili Kering [5 tangkai, potong/gunting serong2]. Dah garing + serbuk lada hitam [1/2 tsb] + sos lada hitam [2 tsbs] + sos tiram + sos cili + sos tomato + sos sotong + kicap manis+masin. Masukkan ayam [1/4 ekor yg dipotong kecil2. Ambil part tulang/sayap supaya nanti kuah lebih manis dan pekat. Jadi tak perlu letak tepung jagung]. Masak sampai ayam empuk. Masukkan sayur kegemaran anda. + cendawan shiitake [potong kecil2] dan tau kua [jika ada]. Masukkan sedikit gula. Bila kuah dah mendidih, pecahkan telur [anggaran 1 biji telur utk 2 plates]. Kuatkan api dan masukkan kuew teow basah. Kacau2 sebenar dan hidangkan.

Abuk-abuk atau Tepung Gomak


Bahan utk inti: Nyior + gula melaka + gula putih.
Bahan utk kulit: Tepung pulut + air + tepung kacang hijau.

autie fadra tak buat cucur lain lagi ka, abuk2 tu sedap, bila nak kirim mai.
Yus Kina baru dok buat xperiment putu piring, tapi tak tahu ler jadi ke idak..

Lunch hari nie fifi fad masak Siakap Sambal Cili Hidup Bernenas. Nie kes pasal tak tahan dengan Yus [@ mama mirul] duk describe her recipe: Sambal Cili Hidup Ketam Jadi fifi fad adapt her recipe sambal ketam ke siakap dan hasilnya mmg cedap!


Tomato nie tengah sale kat Tesco. 1 pek cume sepound.

Bahan2 utama utk memasak Siakap Sambal Cili Hidup Bernenas


Bak kata Yus: minyak berlenang-lenang...


Cedap! Makan dg nasi panas2 yg dituang dg kicap manis cap kipas udang..yummytho!!!

Full recipe from Yus @ Mama Mirul:
Salut ikan siakap [2 ekor size sederhana] dg garam + kunyit. Goreng dan ketepikan.

Blend BBesar [1 labu] + tomato [1 biji] + cabai/cili hidup [5 biji - kalau suka pedas, tambah amountnya].
Tumis di dalam minyak goreng ikan. Tumis biar lama2 sambil dikacau sekali-sekala [part nie paling penting utk mendapatkan sambal tumis yg best!].
Hampir garing dan kering, masukkan asam keping [1 keping].
Tambah garam + gula.
In my case, pasal ada nenas...jadi fifi fad masukkan sekali nenas.
Tuang sambal ke atas ikan yg dah digoreng tadi.

Credit crunch grocery shopping

I used to compare the groceries price from this link:

before I shop online. Boleh compare empat main groceries stores: Tesco, Asda, Sainsbury's dan Ocado [@ Waitrose]. Sangat convenient - cuma klik2 dan jimat bbrp pounds...hey! Now is credit crunch day...every penny counts Worth to try.

Main ings : shrimps, egg noddles, beansprouts + tau kwa.

Full recipe:
Goreng tau kwa dlm api slow - separa masak. Potong kecil2/cubic. Ketepikan.

Tumis B.besar + cabai kering [in this 'episode' I add rencah bihun gr adabi]. Dah garing, masukkan sos tomato [I like Morrisons Tomato sauce] + sos cili [Souds from Home Bargain] + Squid sauce [tesco ada, kedai cina ada...win yip paling murah...berapa pence jer] + oyster sauce + kicap manis + kicap masin + gula. Masukkan telur 2 biji. Kuatkan api dan kacau2 sampai telur masak. Masukkan udang [dan sotong kering jika ada...]. Masukkan mee kuning [egg noddles from Morrisons lagi sedap compare to Tesco] dan taugeh [you can get taugeh kualiti tinggi from Sainsbury's, second kualiti from Tesco n worst kualiti from Morrisons]. Last step, masukkan hirisan bawang besar dan tau kwa goreng. Hidangkan bersama parutan salad dan carrot.







Lagi 'mamak' kalau letak Kalkate dan sotong kering. Tapi fifi fad dah malas nak buat Kalkate...

Breakfast: Pulut dan Kuah Durian

 
 
 
Full recipe:
Kuah Durian:
Satu pek durian* (~ 5-6 ulas yg dibuang biji). Defrost durian. Masukkan dlm periuk tebal + 1/2 cawan gula putih + 1 cawan santan pekat (or setin santan) + 1/2 sudu teh garam + 2 cawan air + 2 helai daun pandan. Masak sampai mendidih. Slow api biar simmer sampai kuah pekat.

Pulut
Traditional way:
Rendam semalam beras pulut** dgn air. Basuh dan toskan. Kukus 30mins. Sira dgn pati santan + garam masa pulut panas2.

My way (short-cut):
2 cawan beras pulut + 2 cawan santan cair + sedikit garam. Masuk dalam mangkuk microwave-able. Set microwave to HIGH. Masak selama 15mins. Setiap 5 mins buka dan kacau2.

* 1 pek Durian frozen = 3.65 pounds (dah naik price, sebelum raya cuma 3.50 pounds ) Where to buy? Tai Fatt, Leics,
** 2 kilo Beras pulut = 3.49 pounds. Where to buy? LCS

Full recipe:
Saffron Rice
Oven saffron for a few seconds. Add ovened saffron into rice cooker + basmathi rice (4 cups) + fresh milk (a cup) + pipe water (5 cups) + a pinch of salt + a knob of unsalted butter (preferably LURPAK). Let the rice soaked for abt 30mins before turn on the rice cooker. Cook the rice as normal rice. Serve with Chicken Rose.

Vietnamese Baked Red Snapper

Marinade 30 mins...


Bakar 20 mins (Gas 4). Tabur dgn chopped roasted peanut...

Full recipe:
3 tbsp soy sauce
1 tbsp fish sauce
1 tbsp squid sauce
6 garlic cloves, crushed
3 lemongrass stalks, finely chopped
2 red chillies, deseeded (optional) and finely chopped
1/2 leeks, finely chopped
Small handful kaffir lime leaves, roughly chopped
1 tsp sugar
* For extra hot, add 2 bird's eye chillies, roughly chopped or pounded.
3 medium red snapper, gutted, scaled and rub with coarse sea salt
30g roasted peanuts, chopped


1. Preheat the oven to 180C/fan160C/gas4. Place all ingredients except the fish and peanuts into a bowl and combine. Place the fish on a foil-lined baking tray and stuff the cavities with half of the marinade, smothering the rest over the top.
2. Bake for 20-30 mins or until cooked through, then remove from the oven and sprinkle with the peanuts to serve.
